Battered Onion Rings

For the batter:

  • 1 cup rice flour
  • 1 tsp salt
  • ½ tsp baking powder
  • ½ to 1 cup beer or seltzer water or club soda
  • Sweet onions, sliced ¼ - ½ inch thick

Instructions:

Heat a pot of oil to 350°F – hold steady temperature

Mix dry ingredients, add beer or other carbonated water until the mix is the texture of pancake batter.

Dip dry onion sliced into the batter and add to hot oil.  Fry until golden brown – drain on a wire rack over a sheet pan to catch drippings.

Sprinkle with salt and enjoy.

Battered Apple Slices with Cinnamon Sugar

To the above Batter recipe above, add 1 tsp. cinnamon and 2 Tbsps. granulated sugar.

Mix well.

Dip apples into batter and fry until golden. Drain then roll in cinnamon sugar and serve.

Standard Breading

  • 1 pan with plain flour
  • 1 pan with egg wash (1 egg + ½ cup water, whisked together)
  • 1 pan with bread crumbs or ground nuts or ground crumbs of any kind you want to use for breading

Instructions:

Wash and dry met, slice into desired shapes. Season.

Dip each piece into flour, egg wash then crumbs.

Press into the crumbs to ensure an even coating.
