Chicken Schnitzel, Red Schug, Purple Cabbage Slaw, Tzatziki Sauce
Chicken Schnitzel Marinade
- Cilantro fresh bunch – ½ bunch
- Parsley fresh bunch – ½ bunch
- Jalapeno deseeded – ½
- Salt – 2 Tablespoons
- Lemon juice – ¼ cup
- Olive oil – 1 cup
- Water – 1 cup
Place all ingredients in a food processor and puree for 1 minute.
Chicken Schnitzel Breading
- 2 cups panko
- 2 cups crushed up cornflakes (about 4 cups whole cornflakes)
Mix
Chicken Schnitzel (8 Schnitzels)
- 1 ½ lb chicken breast (preferably 4 -6 ounce lobes)
- Chicken schnitzel marinade - as needed from above
- Flour – ½ cup
- 2 eggs +2 Tablespoons water
- Chicken schnitzel breading
- Oil for frying
Butterfly the chicken breast and pound until it is even in thickness through the whole piece.
Marinade the chicken for at least 4 hours (preferably overnight)
Drain the marinade.
Bread the chicken by covering it in the flour then egg and breading at the end
Heat up a heavy pan with the frying oil (oil should be around 350° F)
Fry the chicken for 2 minutes on each side or until an internal temperature of 165° F
Red Schug
Makes 1 qt (4 cups)
- Habanero – 20 each (just under 1lb)
- Cilantro, fresh bunch -1 bunch
- Garlic, peeled – ½ ounce
- Tomato, diced - 2 cups
- Salt, Kosher - 2 Tablespoons
- Cumin, ground – ½ Tablespoon
- Paprika, smoked – 2 ½ Tablespoons
- Olive oil – ½ cup
- Water - 3 Tablespoons
Place all ingredients in a food processor and puree for 5 minutes.
Purple Cabbage Slaw
- One purple cabbage (about 1-1.25 lb)- Sliced thinly
- Sugar – ¼ cup
- White wine vinegar – ½ cup
- Kosher salt – 1 ½ Tablespoons
- Black pepper – 1 teaspoon
- Cumin – 1 teaspoon
- Mayonnaise – 2/3 cup
Mix the cabbage with the spices and vinegar and let sit for 5 minutes.
Transfer to a new bowl or drain the liquid.
Add the mayonnaise and mix until the cabbage is coated
Tzatziki Sauce
- Fage yogurt – 1 pound
- Lemon juice - 1 Tablespoon
- Kosher salt – ½ Tablespoon
- Black pepper – pinch
- Garlic – one clove grated
- Mint – 2 Tablespoon. chopped mint
- English cucumber – ½ cucumber shredded
- Olive oil – 2 ½ Tablespoons
- Honey – ½ teaspoon
Mix all ingredients. Let the flavors marry overnight
