Kool Aid Jell O Cake with Cream Cheese Icing
Lemon Poundcake
Ingredients:
● 8oz butter (room temperature)
● 5 eggs (room temperature)
● 2 1/2 cups of sugar
● 1/2 cup of vegetable oil
● 3 cups flour-sifted twice
● 2 teaspoons of baking powder
● ¼ tsp salt
● 1 cup of whole milk
● 1tsp lemon extract
● 2tbsp vanilla extract
● 13x9 aluminum pan or 4.8 quart oblong lol baking dish
Method of Production:
1) Preheat oven to 325 degrees. Grease cake pan with nonstick spray.
2) Using an electric hand mixer or kitchen aid mixer, add butter, sugar and oil together then add eggs. Add sifted flour, salt and baking powder; be sure to scrape the sides of the bowl to ensure that all dry ingredients are fully incorporated. Add milk and lemon extract and blend until smooth and creamy.
3) Bake at 325 for 1hr 15 mins. Using a cake tester or toothpick, check the center of the cake for doneness. Allow to cook at room temp for one hour.
Kool-Aid Jell-O
Ingredients:
● 1 quart tropical punch flavored drink mix
● ¾ cups granulated sugar
● 1 qt cold water, plus 1 ½ cups cold water
● 2 tbsp powdered gelatin
Method of Production:
1) Whisk together the powdered drink mix with sugar and the 1qt of cold water in at 3 qt pitcher or container until sugar is completely dissolved.
2) Using a separate small bowl, add gelatin to the cold water and stir until gelatin is dissolved and softened. Set aside.
3) Bring the punch to a simmer and stir in the softened gelatin. Remove from heat and allow to cook for 30 minutes at room temperature. Set aside for the poundcake assembly.
Sour Cream Frosting
Ingredients:
● 16oz sour cream
● 3oz cream cheese, room temperature
● 2 cups powdered sugar
● 2 limes, zested
● 1 tbsp vanilla extract
Method of Production:
1) Using an electric hand mixer or kitchen aid mixer on medium speed, add all ingredients and blend until smooth.
2) Refrigerate the frosting until ready to dress the cake.
3) When ready, evenly apply frosting to the jell-o cake and refrigerate for an hour before serving, so that the frosting can set.
Kool-Aid Jell-O Cake Assembly:
1) Once the pound cake has cooled completely, use a wooden skewer to poke holes in the cake.
2) Pour the cooled Jell-O mixture over the cake to soak. Chill the entire cake for 8 hours or overnight to set.
3) Once the jell-o cake has set, apply the sour cream frosting evenly over the top of the cake and return to the fridge to set for another hour or whenever you’re ready to serve.
4) When ready to cut into the cake, use a serrated knife to cut 3x4 pieces and serve immediately. Top with fresh sliced fruit for garnish
