French Toast Casserole
1 French Baguette cut into cubes
4 Ounces butter
1 Cup brown sugar
4 Eggs
½ Cup heavy cream or milk
1 Tbsp. granulated sugar
1 Tsp. cinnamon
1 Tsp. vanilla extract
½ Cup chopped pecans – optional
Maple syrup to serve
Cube bread, place in a large bowl.
In another bowl, mix eggs, milk, sugar, cinnamon, vanilla, salt. Mix together.
Pour egg mixture over bread, coating evenly.
Spoon the mixture into an 8 x 8 baking dish. Add nuts if using.
Bake at 350°F for 30 minutes or until bubbly.
Sprinkle with Powdered Sugar and some berries for color.
Add crisp bacon or cooked breakfast sausage for variations.
Serve with maple syrup on the side.
Green Bean Casserole
1 Can (10.5-oz.) mushroom soup
½ Cup milk
1 Teaspoon soy sauce
4 Cups cooked green beans
1-1/3 Cups fried onion rings or shallots
Heat oven to 350°F
Using a 1 ½ quart casserole dish, stir together soup, milk, soy sauce, beans and ½ of the friend onions into the casserole dish. Season with salt and pepper.
Bake for 25 minutes until the mixture is hot. Stir it up and spread the beams evenly across the dish.
Top with remaining fried onions.
Bake for another 5 – 10 minutes or until the onions are golden brown.
Pineapple Casserole

Pineapple Casserole
2 (20-ounce) Cans chunk pineapple – save the juice
1/3 Cup sugar
5 Tablespoons flour
1 Cup cheddar cheese, shredded
¼ Cup butter, melted
1 Long sleeve butter crackers
Combine pineapple, sugar and flour in a large bowl. Add 6 Tablespoons pineapple juice – stir to combine. Spoon the mixture into an 8 x 8 baking dish.
Top with cheddar cheese.
The casserole can be prepared up to this point for baking the next day. Simply cover and store in the refrigerator. Top with crackers and bake to finish.
Top casserole with crushed crackers. Bake in 350° F for 30 minutes or until bubbly
Serve with Glazed Ham or BBQ Ribs as a side dish or top with whipped cream or ice cream for a snazzy dessert.
